Mikel Redondo joined us from the prestigious ‘Ballynahinch Castle & Estate’. Originally from the ‘Basque Country’ he developed his artistic skills through the complex culinary diversity of the Iberic Peninsula: from continental Spain (Bilbao, Barcelona, Madrid) & the African coast (Canary Islands) he mastered a ‘sunny’ cuisine that warms up our Connemara evenings.

Redondo holds many awards from cooking competitions all throughout Spain.
